LAND DAYS: CHIA PUDDING

This morning i wanted to make a quick and easy breakfast so i decided to try my hand at chia pudding. Chia seeds are a great, easy source of omega-3 fats and fibre to add to your diet. These little guys aid in boosting energy, digestion, stabilizing blood sugar and lower cholesterol. Normally i sprinkle chia seeds onto my yogurt or oatmeal but i decided to try something new today.

CHIA PUDDING

INGREDIENTS:

  • Chia seeds (enough to fill half of a cup)
  • Unsweetened almond or coconut milk
  • Cinnamon
  • Stevia


DIRECTIONS:

  • Fill your cup half way with chia seeds
  • Add a TSP of cinnamon
  • Add Stevia to taste (i used 6 drops)
  • Fill the rest of your cup with your unsweetened milk, while stirring
  • Let mix stand until it thickens. The chia seeds will produce their own gel, which forms the base of the pudding.
