Since making my [Healthy Coconut Freezer Squares] the other day, i decided to make a batch of 'healthier' chocolate macaroons. This was my first time baking them on my own even though i've loved them since i was a kid. Dipping the macaroons in melted dark chocolate made them even more delicious when they came out of the freezer!

______
'HEALTHIER' CHOCOLATE MACAROONS
INGREDIENTS:
- 1 TBSP flour
- 1 TBSP cocoa powder
- 4 TBSP pure maple syrup
- 1/2 cups & 2 TBSP of almond milk
- 1 cup shredded, unsweetened coconut
- 1/4 TSP pure vanilla extract
- Pinch of salt
- Dark chocolate chips
DIRECTIONS:
- Combine all ingredients (except chocolate chips) in bowl and mix.
- Microwave mix for 2 minutes, stir, and then microwave again for 1 minute. You'll know the mix is done when it is firm enough to scoop out.
- Scoop mix onto cookie tray (i managed to make 10 macaroons).
- Cook at 360 degrees for 14-16 minutes. Depending on the size of your scoops they may need a little more or less time (mine needed about 18 minutes).
- Remove cookie tray from oven and allow macaroons to cool.
- Melt dark chocolate in microwave (takes ~1 minute and 30 seconds) and dip one half of each macaroon.
- Freeze macaroons for at least 20 minutes.
