LAND DAYS: HEALTHY PEANUT BUTTER FREEZER FUDGE

Although i am a fairly confident cook, the thought of baking terrifies me. To me, baking has always been like putting together a magic potion. Cooking is a step-by-step procedure i can follow whereas baking is more of an art form that i cannot comprehend. The fact that i am not the biggest 'sweet' person also doesn't make me want to go running to my kitchen to whip up a cake or a batch of cookies. That being said i am trying to find easy, healthier sweet recipes to have for when i get a craving for a tootsie roll.


Today i decided to try and make a healthy peanut butter freezer fudge. The recipe i used is another taken from [Detoxinista]. This was also my first time using raw honey and it is freaking amazing!!! I was licking the bowl clean while i waited the 30 minutes for the fudge to set in the freezer. It's safe to say that i will be making this frequently and i'm excited to try her other freezer fudge versions in the future.

HEALTHY PEANUT BUTTER FREEZER FUDGE

INGREDIENTS:

  • 1/2 cup of natural organic peanut butter (i used a crunchy version)
  • 1 TBSP raw honey
  • 1/2 TSP pure vanilla extract
  • 1/4 TSP fine sea salt
  • 2 TBSP coconut oil, softened

DIRECTIONS:

  • Mix all ingredients until a smooth batter has formed
  • Transfer batter into dish and place in freezer
  • Allow 30 minutes to sit (or until firm)
  • Cut into squares and serve immediately, YUM!
